A history of Ethereal Brewing and Pepper Distillery
This 25-acre property was home to the historic James E. Pepper Distillery, which began making bourbon in 1879. However, in 1958 the site was abandoned completely, untouched for nearly 50 years. Ethereal Brewing was the second business to open in spite of the clear neglect of the existing structures and the moonscape like parking lot.
Ethereal Brewing’s place on the property begins with Andrew Bishop traveling to Northwood IA to visit family where he found his uncle brewing beer in a small brewery and taproom called Worth Brewing. Andrew saw this as his future, owning and operating a Craft Brewery. He soon found a partner in beer, Brandon Floan, who was captivated by the science of the production of craft beer.
Since then, this revitalized piece of Lexington history has become a lively downtown destination. Along with Ethereal Brewing, you’ll find a cidery, a craft ice cream store, a coffee shop and multiple options for food and drink at one of Lexington’s most exciting hotspots.
Big and bold sherbert style sour with lemon, lime, tangerine, milk sugar, and a kiss of vanilla bean
Very drinkable with the upfront coffee and roast character balanced by sweet molasses notes.
This IS your dad’s beer – A classic pilsner that is light, crisp, and goes down super easy!
Our lightest offering, brewed with 10lbs of fresh fruit zest (sweet oranges, lemons) and Indian coriander seed. Very light with a fluffy mouthfeel and dry finish.
Brewed with English malts, this dark ale has a toasty flavor with bready and deep malt notes
Fiercely hopped, with 3lb/bbl of Northwestern hops, minimum malt, and a dry finish. Flavors include grapefruit pith, pineapple, and citrus.
Our base sour ale with passionfruit, almond, and lime. Reminiscent of the classic tiki-style cocktail, the Saturn.
Collaboration with Blue Stallion Brewing. Explosively hoppy imperial hazy IPA that is out of this world! Galaxy, Citra, and Strata hops launch a tropical payload into a soft and creamy body.
Our original Four Roses barel aged imperial stout – chocolate and bourbon forward with hints of nuts and sherry.
Our Baba Yaga conditioned on Dominican and Nicaraguan cocoa nibs, sea salt, and Madagascar vanilla bean

Light and citrus forward gose, easy drinker. Collaboration with Dreaming Creek Brewing.
Jam packed with blueberry and muffin goodness! The beer stats out fruity and sweet, and finished with a cleansing acidity, just begging for the next sip.
A delightful French Pilsner. Similar to an American Pilsner, but with a touch more sweetness and floral notes. All proceeds from this brew are donated to Operation Secret Santa, a local non-profit that gets presents to kids in need.
This is a New England style IPA, meaning high on the hop flavor, low on the bitterness, and hazy as all get out!
